Brickhouse Tavern + Tap

Brickhouse in Plano has a new menu. (More “bro” food, more potent drinks, ya know.)  I was excited to visit because I had no idea until this invite that Texas had so many Brickhouse locations! It’s the perfect restaurant to meet up with a buddy, watch a game, or have a group happy hour. Fireplaces and spacious seating areas with tables and booths are abundant in this large, yet super friendly environment.

The table of bloggers and writers started the night with some of Brickhouse’s signature drinks; I was most eager to try out their well-known Bloody Good Mary (Skyy Vodka, Zing-Zang, Guinness, and Pickle Juice topped off the specialty with salami, smoked cheddar, olives, a deviled egg, and a spiced pork rind rim). From the first sip, this bloody lived up to everything I remembered it to be–spicy and full bodied with a little snack to nibble on as you savor the drink.

Another one of my favorite cocktails this evening was one of the drinks my awesome servers suggested, the Blackberry Collins (Tito’s vodka, St. Germain, club soda, and muddled blackberries). They top this sweet drink with a sprig of mint which offsets the sweetness, as well as a skewered blackberry … because the muddled ones unfortunately hold zero aesthetic value despite the wonderful flavor they add to the cocktail.

Although the drinks at Brickhouse are plentiful and delicious, this place doesn’t slack on their food.  Read: you’re not stuck with ordinary bar food. Brickhouse served up delicious appetizers and it was extremely hard to pick a favorite. (I will say that you can’t let the duck wings pass you by here!) These crispy wings are tossed in their house-made “Man Cave” sauce and cilantro and are served with a side of Sriracha ranch which gives it a sweet and spicy flavor. If you’re looking to add a few more appetizers to your order, don’t miss out on their deviled eggs made with smoky bacon and a hint of jalapeños, or their parmesan and panko breaded zucchini curls – also served with a side of the Sriracha ranch.

Brickhouse is home to many flavorful choices when it comes to burgers, but their chargrilled Bison Burger takes the top prize for me. They top this slightly sweet patty with jalapeño cilantro mayo, sweet, thick cuts of candied bacon, mild cheddar cheese, lettuce, tomato, and onion and serve it to you on a perfectly toasted brioche bun. If you’re a fan of bison, this dish is a must-try. I would skip the traditional fries and go for one of their many specialty French fry options. My favorite was the garlic parmesan; the spuds came out golden brown and topped with fresh garlic and parmesan cheese.

Being a recent Chicago transplant, I’m always on the lookout for great pizza. I was surprised by their brick-oven pizza; it was amazingly fresh and delicious. I ordered the Kobe Brick Pizza, which featured marinara, American Wagyu beef, brick cheese, caramelized onions, oven roasted tomatoes, crispy bacon and arugula. The pizza was served fresh from the oven and was a great spin on the classic Italian brick oven specialty. I loved the addition of kobe beef and crispy bacon!

Julia Pearl Southern Cuisine

Northern suburbanites, rejoice! Chef Tre Wilcox (of Top Chef fame) and Darcy Dudley of Trendine Restaurant group have brought southern cooking to Plano.

Conveniently located at Central Expressway and West Park Boulevard in the former Allen Wickers Pub location, Julia Pearl Southern Cuisine open their doors for dinner earlier this month. Darcy Dudley described Julia Pearl (named after the family matriarchs, grannies Julia and Pearl) as his life-long dream, finally realized. Darcy wanted to bring classic southern traditions of food, family, and friends to the Plano area. His vision was a menu featuring scratch-cooked southern specialties with modern twists and surprises. To help accomplish this, in addition to Culinary Director Tre Wilcox, Chef Jermaine Brown (formerly of Abacus; Brennan’s of Houston) was brought on board as Executive Chef. I like to think Grannies Julia and Pearl would be proud as a pair of peacocks.

Julia Pearl’s menu is small but thoughtfully constructed, featuring a variety of expected southern fare, with the occasional vaguely Cajun twist. Shareable starters include Julia and Pearl’s Chicken Wings (served three ways: BBQ sauce, Hot Sauce, & Lemon Pepper) ($11)Deviled Eggs ($6)crowned with crispy chicken skin (yes, you read that right), and a crowd-pleasing Black-Eye Pea Hummus ($7), served on crostini. My personal favorite was the Jumbo Lump Crab Cake ($10), served atop a delicate lemon mustard sauce, dotted with parsley oil. The crab was tender and moist, and the sauce provided a perfectly tangy compliment. Julia Pearl boasts a house-made Gumbo ($9), prepared with shrimp, crab, and andouille sausage, served with fried okra. The gumbo, which I found to be brothier than average, received high marks from my fellow diners. I am not a Native Texan, and not a gumbo aficionado  but I have noticed you Texans take your gumbo very seriously…and therefore, color me impressed. 

Julia Pearl’s featured entrees include Cornmeal Crusted Catfish, served with whipped potatoes, green beans, and a caper lemon butter sauce ($15), Marinated Jumbo Texas Shrimp with Spicy Cheese Grits, served with broccoli saluted and a smoked red pepper sauce ($20), and a Grilled Bone-In Pork Chop  served with bacon cheddar grits, collard greens, and a ham hock maple glaze ($18). My preferred dish of the evening was Julia Pearl’s Southern Fried Chicken, served with a homemade biscuit (whole cut-up bird $21/ half bird $11). The breading was thin and crispy, with a notable lack of grease, and the chicken was moist and meaty.

Julia Pearl’s cozy bar area features a cocktail menu with eight southern-inspired cocktails. To name a few: the mild-mannered Pearl’s Old Fashioned- Jacob’s Ghost (Jim Beam) White Bourbon, Bitters, Orange; the sweet and fruity  Jazzy Belle- Strawberry, Pineapple, & Tito’s; and my personal favorite, the particularly potent Julia’s Berry Mint Julep- Blackberry, Old Smoky Moonshine, and Fresh Mint (all cocktails $10). Julia Pearl features seven local drafts on tap, in addition to a carefully appointed wine list.

Hickory by Kent Rathbun

Kent Rathbun. (Not Ken Rathburn or Kent Rayburn.)  However you may butcher his name … you know that he knows what he’s doing.  We can thank him for the amazing concepts like Abacus, Jasper’s, and (formerly) Blue Plate … and now his newest venture, Hickory Plano, can be added to the list.

Their amazing PR girl arranged a bus to take us alllllll the way up to Plano to check out the new concept … which, if you know me, was a huge treat because I hate to drive.  Like …I hate it real bad.

The drive took us up the Tollway just past The Shops at Legacy (the home of Kent’s Jasper’s).  Upon arriving, Kent greeted us and showed us around the newly renovated space.  Expect a lot of raw wood, metal, and deep reds and browns.

While Hickory is a BBQ joint, the drinks leave nothing to be desired (except maybe another one).  They offer a full bar that can crank out anything from a Barrel-Aged Old Fashioned featuring Makers 46 to classics–Moscow Mules, anyone?  If you want to get a little crazy, check out their Cactus Juice (Avion Reposado, Triple Sec, prickly pear nectar, and lime).  And make sure to check out their Texas cocktails featuring Deep Eddy drinks.

If you’re into the beer situation, they have some great local options, but certainly not an extensive list–select crafts on tap and a handful of bottled options.  Their wine list includes a couple Texas wines and a curated list of decently priced options.

When the food started hitting the table, we all knew we were in for a long night.  I LOVED the salad options, which sometimes can be a bit lacking at a BBQ restaurant.  I almost couldn’t get enough of the Shrimp & Crab Coleslaw that featured a spicy cilantro vinaigrette that I could just about take a straw to.  I would also have to say that the Fried Green Tomatoes with charred jalapeño ranch were unreal. (We may or may not have been fork-fighting for the last piece.)  A starter that cannot be missed is their Smoked Sausage Fondue featuring whichever of their house-made sausages they choose for the day with creamy, cheesy goodness.

When I saw the entrees, I was so thankful knowing that we had a bus to take us back as I knew I’d have at least half and hour to recover before getting behind the wheel.  (I mean that not due to the drinks … but due to the sheer amount of meat I was about to consume.)  Their options for mains range from traditional burgers and sandwiches (and some not-so-traditional ones) and meats.  Some seeeeerious meats.  Their “little red smokehouse” prepares heavenly cuts that are sold by the 1/2 pound like their Smoked Pepper Crusted Wagyu Brisket, Hickory Smoked Turkey Breast, and Shaved Roti Pork Shoulder.  All of the meats were quite flavorful and I’d return for any single one of them, but some were a bit on the salty side.  That just means that you need to balance the meats with their Charred Corn Bread which was UNreal.  Get into that and don’t miss the Round Rock Honey butter that comes with it.

All of the sides that we tried were good, but the Crispy Brussels Sprouts were in the only bowl that saw the light of day.  These things, y’all, are f**king amazing.  (And not just because I love Brussels sprouts.)  Don’t miss the Blackstrap Molasses Baked Beans, too.  I mean … these beans have bacon on top.

The meal was coming to an end (so we thought) when dessert came out.  Instead of one of their Shareable Desserts for the table, they brought us all of them.  We tried Maw Maw’s Buttermilk Pie, which was a light-ish option but wasn’t up my alley, the Texas Size Chocolate Cupcake, which had a bit of spicy bite to it, and the Skillet Cobbler, which I’d eat all day every day!  The crunch on top was a perfect textural balance to the gooey fresh berries it hid.

Overall, the meal was overwhelming … and I don’t mean because of the amount of food, but because of how amazing everything was.  I don’t know why I expected anything other than brilliance from Kent Rathbun!

Make the drive–just plan to give yourself some recovery time before driving anywhere after.  Because … meat.

Let’s Get (Pepper) Smashed

I’m a big fan of the “fancy” cocktail. Don’t get me wrong … there is a time and a place for a good ol’ plain Jane vodka soda. (Usually that time is whenever I am on a diet, and that place is wallowing in a pool of sadness…just kidding! …kind of.)  But, if I really want to savor what I’m drinking, I enjoy seeing what happens when bartenders are allowed to flex their mixology muscles and craft drinks that stretch beyond the realm of classic cocktail offerings. If you’ve never been to Pepper Smash at The Shops at Legacy in Plano, believe me when I say that “creative” is their thing. I am still trying to figure out whether their cocktails are more aptly described as “art,” or “science,”- but whatever the case may be- they are mixing up some mighty delicious libations.

Pepper Smash graciously invited me in to check out a few of their new menu offerings, and of course to reacquaint myself with a few of their delicious signature cocktails.

We kicked off the evening with one of Pepper Smash’s most popular cocktails: the Fire Smoked Dr. Pepper ($11). As the name suggests, this cocktail is quite literally smoked before your very eyes, infusing Maker’s Mark with a smoldering oak essence created with a nifty apparatus apparently designed for this very purpose (though it vaguely looks like something Walter White would have stashed in his RV). Imperial sugar Dr. Pepper is add to the mix, giving the cocktail a delightfully familiar sweet-smokiness.

Smoked wood chips are impressive, to be sure, but you aren’t really winning at craft cocktails until you throw a cotton candy machine into the mix. That’s right, Pepper Smash keeps a cotton candy machine behind the bar for the sole purpose of crafting one drink: the Cotton Candy Martini ($10 — Absolut, lemon juice, vanilla syrup, champagne, and you guessed it: cotton candy). I had a hard time conceptualizing how this cocktail would “work”, so I had to order it to see for myself. A familiar fluffy cloud of pink cotton candy is served in a martini glass, and the liquid ingredients are then poured over the cotton candy, which dissolves amidst a fleeting instant of melancholy. But, you can still taste it. Not shockingly, this cocktail is on the saccharine side and reminded me vaguely of a boozy Orange Crush. Definitely an interesting selection.

Because cotton candy machines and booze smoking apparatuses apparently aren’t enough, Pepper Smash offers two cocktails that are frozen with liquid nitrogen: the Pineapple Express ($11 — Bacardi Pineapple, ginger, pineapple juice, champagne) and the Triple M’s Explosion ($12 — pineapple and strawberry infused vodka). The presentation of this duo is dramatic to say the least, as wisps of “smoke” dance atop your cocktail glass  when it is placed in front of you.

“But, what is a Pepper Smash,” you may wonder? I’m glad you asked, because I simply can’t visit without ordering one. The cocktail kitchen’s namesake, the Pepper Smash ($10), incorporates a bold blend of Tito’s vodka, red bell pepper, jalapeno, onions marinated in 100 proof vodka agave, and lime juice. Spicy and robust with just a hint of sweetness, this unique savory cocktail is probably my favorite one on the menu. (I recommended it to the guy seated next to me at the bar, and he ended up drinking three.)  I say the Pepper Smash is “probably” my favorite, because I have a hard time dismissing Eden’s Garden ($12 — Plymouth gin, elderflower, cucumber, basil, mint, jalapeno, lime juice- as a close second).

With so many creative, tasty cocktails to focus on, it would be easy to overlook the food at Pepper Smash. Don’t. Everything I have ever sampled from their kitchen has been seriously delicious. Sometimes, I find myself day dreaming about their Smokey Mac & Cheese ($9 — cavatappi pasta, sharp cheddar, gruyere, smoke). Everything I sampled on this visit was equally as tempting.

We started out with the Pimento Cheese ($8), which was topped with bacon jam, and accompanied by buttery grilled sourdough and blistered shishito peppers. Holy new favorite appetizer. If there is something in this world that cannot be improved upon by bacon jam, I want to hear about it.

Pepper Smash always hits it out of the park with their flatbreads, and this visit was no exception. We sampled the Al Pastor ($12 — cider braised pulled pork, sweet onion puree, pineapple, jalapeño, and lime). The toppings were generously portioned, with a little taste of every ingredient in every bite. If you are a fiend for spicy dishes, this flatbread is definitely for you; loaded with fresh jalapeños, this dish definitely woke up my palate.

When it comes time for dessert and the manager asks, “Wanna try something weird?” there’s clearly only one correct response. We were presented with a liquid nitrogen frozen ice cream concoction- incorporating Licor 43, vanilla ice cream base, basil, and fresh strawberries. I love unexpected flavors in desserts, and the basil was an awesome addition. This was an off-menu delight, but I feel confident it can be snagged upon request.

TLDR: the next time you feel inclined to treat yo’self to an incredibly unique, seriously indulgent cocktail experience (yes, it really is an experience), + some killer eats, head on over to Pepper Smash at the Shops at Legacy. (And probably plan on Ubering it because the urge to try all of the cocktails on the menu is pretty overwhelming.)

Pinstack: Bowling, Bites, and Brews

I have a confession to make: from time to time, I exhibit symptoms of DADHD (that’s Drinking Attention Deficit Hyperactivity Disorder, for the un-afflicted). Some evenings, I am perfectly content sitting on a relaxing patio, sipping on a tasty cocktail, and feeling the breeze in my hair (and subsequently detaching my tresses from my sticky/glossy lips, but that’s another story #girlproblems). BUT, on other occasions, I get restless … antsy … fidgety … and compulsive phone checking may or may not commence. I need something more. Enter: Pinstack! Boasting 50,000 sq ft of drinking, dining, bowling, bumper cars, laser tag, a ropes course, and games-galore, Pinstack is basically the answer to my DADHD prayers. As you guys know, I’m a bit of a bowling nut. I think learning How to Clean A Bowling Ball With DIY & Commercial Cleaners shows how much I love playing.

Right about now, you might be thinking to yourself, “Ok, I’ve been to a couple of these ‘bowling and more’ spots, and they seem to be pretty interchangeable.” Nope, nope, nope. I am here to tell you, Pinstack is not like the “other guys”. Admittedly, most of the bowling/entertainment complexes I’ve visited in the past have felt as though the proprietor decided to open a bowling alley, and “Oh, I guess that means we’ll need to offer some sort of food and drink as an afterthought.” At Pinstack, you’ll feel as though you are visiting a top -notch restaurant and bar, which just so happen to be attached to an amazing entertainment complex.

First, high praise goes to Pinstack for strategically locating their main bar, restaurant, and patio (yes, patio!) in an area that’s largely offset from the bowling and entertainment areas of the building. If not for the tell-tale bowling pin art adorning the walls, it would be easy to forget you are, in fact, at a bowling alley. (But what’s a guy or gal to do if they require a drink refill…or three…while bowling? Worry not, friends, as Pinstack provides lane-side food and beverage service, and access to a secondary bar located in the heart of Bowling Land!) The sprawling bar area is adorned with numerous jumbo screen TVs that would give any sports bar a run for its money. The large, covered patio is equipped with a number of high-powered fans to keep you cool, and on Thursday and Friday evenings, you can catch live acoustic music sets from 6:00-10:00 PM.

Logistical considerations are just the icing on the cake in considering what makes Pinstack so gosh darn appealing. Behind the well-appointed bar, they are serving up an impressive variety of libations. For starters, Pinstack’s drink menu features a dozen tempting craft cocktails. I had an opportunity to try the Gin Smash- Farmer’s Gin, fresh lemon juice, mint, honey, & Bar Keep Apple Bitters ($12). This cocktail was light, refreshing, and well-balanced, with a perfect ratio of sweet, sour, and minty goodness. I also sampled the Cello Mule– Tito’s Vodka, Limoncello, fresh lime juice, & Gosling’s Ginger Beer ($13), which was about as delightful as a summer breeze.

As much as I enjoyed my cocktails (which was a lot…), I think I was even more excited to learn of another alcoholic option Pinstack has to offer: beer & wine flights, my friends. Oh, yes. I will forever be a sucker for the tasting flight, and Pinstack serves up beer and wine tasting trios- curated by you- for just $7 and $9, respectively. In addition to a variety of domsetics and imports, Pinstack features 10 local rotator taps for your sipping pleasure. On the vino front, Pinstack is pouring six interesting selections by the cask, in addition to a wide variety of bottle/glass offerings.

As you can see, Pinstack’s beverage offerings are a far cry from your familiar plastic bowling alley pitcher of PBR. Well, guess what: The quality and creativity of Pinstack’s edible offerings are equally impressive. Pinstack has rolled out a new spring menu, and I had the opportunity to politely sample (read: I totally stuffed my face) a few of their delectable offerings. First, I want to talk about the Party Platter, which isn’t for the faint of heart. This bad boy serves 6-8, and comes fully loaded with loaded potato skins, fried mozzarella, chips and salsa, FRIED MAC N’ CHEESE POPS with a tomato basil dipping sauce (what?!), and some plump n’ juicy chicken wangs ($36). Everything I tasted on this (freaking massive) platter was delicious, but those mac n’ cheese pops? They were the star of the show- and yes, you can order them a la carte for 9 well spent bucks. We munched on a beautiful artisan Meat and Cheese Board ($11), which was generously appointed and encompassed some interesting and tasty selections ( Red pepper crusted goat cheese balls? Yes, please).

The entree I was most impressed with was the Stack Mac Burger ($13), which is admittedly not for the faint of heart. Remember that fried mac’ n cheese I mentioned earlier? Stick it on top of a burger, and slather the whole thing in tomato basil sauce … and, yeah. You get the picture. Other decadent entree offerings include a 12 oz. Ribeye ($24), a Grownup Grilled Cheese ($9), and a number of unconventional pizza offerings, like the Honey Bee ($12), topped with Italian sausage, black forest ham, and you guessed it, honey. If you find yourself in search of a *slightly* lighter dish (you know, the stuff I should be eating given my impending nuptials), you might give some consideration to the Blackened Mahi Mahi ($19), topped with a pineapple pico and a sweet chili glaze, plated atop Jasmine rice. Another lovely lighter option is the Spring Greens Salad ($9), featuring goat cheese, candied pecans, grapes, and a champagne vinaigrette- topped with chicken or salmon, if you are so inclined.

ARE YOU NOT ENTERTAINED??? Allow me tell you a little bit about the variety of entertainment options you will find available, once you manage to peel yourself away from Pinstack’s enticing bar area. Pinstack offers 28 state-of-the-art bowling lanes, 20 of which are public and 8 private (perfect for parties and corporate events). That being said, bowling is just the beginning. Pinstack also features a two-story laser tag arena … who doesn’t love laser tag? (seriously, if you can’t having fun playing laser tag, please escort yourself here?) They also offer a bumper car arena if you’re feeling a little rambunctious, a high ropes course, towering 20 feet above the arcade area, and a 28 foot LED rock wall … if you’re feeling a little adventurous. Speaking of the arcade area, Pinstack offers a pretty insane variety of state of the art games and novelties, and they own a few games that can’t be found anywhere else in the world, like their brand spankin’ new Jurassic Park game. They also have a claw machine game where you can win Ben & Jerry’s. What more do I really need to say?

RA Sushi’s New Menu Items

The thing I love about RA Sushi is the imaginative and often unexpected twist they seem to gravitate toward when dreaming up their delectable menu items. Take my current favorite RA cocktail offering, for instance- the Emperor’s Cucumber Margarita ($9; Patron Silver, Combier Liqueur d’Orange, lime juice, Japanese yuzu, agave nectar, cucumber). The last place in the world you would expect to find a legit marg might be a sushi restaurant, but trust me, this interesting spin on a traditional ‘rita is uniquely delicious.

Channeling that same creativity and use of thoughtful and surprising ingredients, RA Sushi has dreamed up nine new menu items, which will be available for a limited time (through August). I had the 10 Drink Sampleropportunity to sample some of the new menu offerings, and they did not disappoint.

RA has added three new cocktails to the roster, and my favorite of the bunch had to be the Pear and Lemon Blossom ($8.50), a pear-infused lemonade, made with Absolute Pears, St. Germain, lemon sour, and a pear puree. The pear flavor in this fruity cocktail was not shy, and it mingled nicely with the tart lemon;  oh-so-sippable and refreshing for spring. Also new are the Hot Tropics Margarita ($8.50): Tanteo Tropical Tequila, Combier Liqueur d’Orange, shaken with mango purée, lime juice and agave nectar, served with a chili-salted rim; and the Peach Basil Sour ($8.50): Bacardi Peach Red, St. Germain, fresh basil and lemon sour.

RA also has some new limited time sake offerings, including TY KU Coconut Nigori Sake ($8/$16 *330ML Bottle): premium nigori sake infused with the refreshing taste of coconut and aromatic hints of vanilla; and,  the enticing Discovery Sake Flight ($9): which includes three 2 oz. pours: MIO Sparkling, Kizakura Pure and Saturi “Little Lily” Nigori.

Two new appetizers have been introduced, each featuring seabream. I found myself wondering “What’s a seabream?”, and soon learned it is in fact a mild white fish with a taste and texture  similar to sea bass.  We sampled Red Seabream Carpaccio ($11): finely sliced red seabream and lemon topped with a spicy yuzu dressing, organic micro greens, truffle salt and touch of lemon zest; this light dish was full of fresh, delicate flavor, and it was a favorite at our table. Also available is Red Seabream Nigiri ($4.50): red seabream over rice, topped with spicy yuzu dressing and truffle salt.

We sample two new entree offerings, and I particularly enjoyed the Tuna California Roll ($9), a classic California Roll topped with a mix of tuna, avocado, cucumber, bell pepper and cilantro, finished with togarashi, garlic chips and black pepper soy sauce. Garlic lovers, this roll is for you. The toasted garlic chips were bursting with flavor, and I loved the extra crunch they provided for added texture. We also tried the Langostino Strawberry Salad ($12): langostino, strawberries, cucumber and avocado over arugula, tossed in citrus vinaigrette, served with a tangy kiwi wasabi sauce and truffle salt. This salad was very light and fresh, making it a perfect warmer weather dish.

Whether you’re thinking about checking out these tempting new menu items, or if it’s high time you stopped in for some of your old favorites, a great time to visit RA Sushi would be between Monday, May 25, and Sunday, May 31. During “Nicky’s Week,” RA Sushi will donate 100% of sales from a variety of menu items to St. Jude Children’s Research Hospital, in order to benefit kids battling cancer and other life-threatening diseases. DFW Craft Beer Throwdown at Cambria Plano

Cambria Hotel and Suites has opened a brand spankin’ new Plano property on Parkwood Blvd, just steps from the suburban booze/fine dining/shopping wonderland  we call Shops at Legacy. This is most excellent news for out of town guests, business travelers, bachelorettes, and packs of prowling cougars alike.

In addition to being an ideally located crash pad, the Cambria Hotel & Suites just so happens to be kind of awesome. The 129 room, 4-story hotel features comfortable luxuries (think spacious rooms with over-sized living areas, spa-inspired bathrooms, etc.) coupled with practical and useful features, like a multi-functional media hub for your undoubtedly excessive number of electronic devices. The Cambria Plano offers 2,400 square feet of meeting/conference space if that’s something you need … and, a full service bar and lounge area, if THAT’S something you need, in addition to a contemporary bistro. They also have a really sweet pool area, featuring a notably swanky looking cabana setup (complete with fire pits for the colder months, ThankYouVeryMuch).

I was excited to attend the Cambria’s grand opening celebration earlier this month, for a few reasons, really; in addition to checking out this cool new property, I got to experience not only a sampling of the impressive cuisine Cambria Chef DeMaria dreamed up for this event, but also a series of beer pairings offered up by five of DFW’s very own local craft breweries. This wasn’t just any ol’ beer tasting event, though- oh, no. Each of the five breweries in attendance were charged with the task of presenting their finest suds to a panel of judges, led by former Plano Mayor Phil Dyer, in order to determine which of the five offerings would earn a tap behind the Cambria bar. The offerings of the evening, in no particular order, consisted of:

  • Lakewood LagerVienna Style Lager, 4.6% ABV- this has always been one of my go-tos- it’s just so darn drinkable with its light maltiness and balanced bitter hop. I felt this was a contender due to its versatility (but it doesn’t matter what I think, because I’m no former mayor).
  • Community Mosaic IPA, India Pale Ale, 7.5% ABV- If you haven’t tried this beer, it’s about as hoppy as this guy. If you love hoppy, well-balanced beers, you will love this beer. I felt this was a brave offering from Community, seeing as it makes such a bold statement.
  • Peticolas Velvet Hammer, Imperial Red Ale, 9% ABV– this smooth, malty red ale is slightly floral, lightly sweet, and moderately full-bodied. It will also knock you on your ass in a relative hurry. That said, it’s interesting and delicious. Nice choice.
  • Deep Ellum Brewing Company Dallas Blonde, American Blonde Ale, 5.2%- I hear it goes down easy (that’s a joke…remember this?). But, it’s true; this delicate golden session ale is exceptionally drinkable. For that reason, I considered Dallas Blonde to be another favorable horse in this race.
  • Franconia Dunkel Lager, Munich Dunkel Lager, 4.4%- it’s the bier from here, y’all. Brewed following the practice of German Purity Laws, this dunkel is toasty and malty, with a light, chocolatey finish. I have always enjoyed the straight-forward, no-nonsense approach these guys take to their craft. While this may have been the darkest beer offering in the race,  it was no dark horse, in my humble opinion (#jokes).

Five fine contenders, vying for one coveted tap behind the Cambria bar. While all five of these local offerings were winners in my book (or more accurately, in my belly…), there could only be one. And there was. The judges made a unanimous decision.

Community Mosaic IPA

There you have it. Community Mosaic IPA will be available behind the bar at the Cambria, in addition to three other craft handles, and twelve domestic offerings on tap. I did not correctly guess that such a bold offering would win the judge’s affection, but I loved the plot twist. I’m sure it was a difficult decision, but I’m not sure the judges could have gone wrong. To quote former Mayor Dyer, “I believe in beer”.

Because variety is the spice of life, Cambria’s bar and lounge features also an ample selection of liquor and wine. Featured cocktails include the Cambria Margarita $7, and the Blackberry Mojito $9. 

I would be remiss to wrap up this event re-cap without mentioning how delicious the food offerings were. We were able to sample a variety of creative and delicious dishes, ranging from Cambozola Mac n’ Cheese to my personal favorite, a Franconia Dunkel braised sausage, served atop mashed potatoes with pepper-onion tapenade and a mustard gravy. Yes. Featured menu items in Cambria’s contemporary bistro include inventive dishes such as the Pesto Drummies Appetizer served with blue cheese & butter ($10), Sriracha Glazed Salmon, featuring house-made Sriracha, served with green chile grits ($13), and the Flat Iron Steak with garlic spinach and Idaho fries ($19). I also hear tell that Cambria serves up a killer house-made Tres Leches Bread Pudding topped with lime zest ($7). Run and tell that, homeboy.

Kenny’s Burger Joint – DIY

I am a huge fan of Chef Kenny Bowers and his growing family of seriously delicious restaurant concepts, otherwise known as Kenny’s Wood Fired Grill (Addison), Kenny’s Italian Kitchen (Addison), Kenny’s Smokehouse (Shops at Legacy), and Kenny’s Burger Joint (Frisco and a NEW Plano location!). That said, I was super excited when I received an invitation to check out the aforementioned, brand spankin’ new Kenny’s Burger Joint location in Lakeside Market in Plano. Kenny and his awesome team hosted a holiday-centric event highlighting some fun and festive appetizers, and some seriously tasty cocktails.

If you’ve visited Kenny’s Burger Joint before, it’s no secret Kenny Bowers serves up a mean burger; quite honestly, probably my favorite burger. Kenny perfected his juicy, 8 oz. patties over a natural hickory wood-burning grill, and the availability of delicious topping combinations to follow said grilling extravaganza offers something for everyone. If you aren’t feeling a burger (excuse me, what?), Kenny’s menu features a variety of other tasty options, ranging from the black angus Big Dog, and the Steak Bomb  (Kenny’s take on the classic Philly cheesesteak), to lighter options, like the fresh and delicious Ahi Tuna and Asian Chicken Salads.

Hopefully, if you’re a Kenny’s Burger Joint fan, you’re already aware of the greatness that is Kenny’s cocktail menu. Kenny’s well-rounded drink menu is thoughtful and creative, and includes indulgent additions such as the famed “Adult” milkshakes (I got to try the Chocolate Grasshopper (Crème de Menthe, White, Crème de Cocoa, and Oreos) and OhMyLanta, it was good. Additionally, Kenny’s Burger Joint offers a reasonable wine list and a respectable craft beer selection. Oh, and they offer Grey Goose on tap. So, there’s that.

I got to sample a variety of particularly delicious cocktails on this occasion, and today, you are in luck: Kenny’s talented bartenders were kind of enough to share some of their delicious cocktail recipes, so you can try your hand at recreating some of these beauties at home!


 

**Here’s a tip before you get started: Kenny’s standard for mixing cocktails demands no fewer than 25 “shakes” when mixing cocktail ingredients in a shaker. This results in bruising of the alcohol, which in turn creates a nifty sheet of ice atop the drink when you pour. (The more you know.)

Shake first three ingredients. Top with splash of Prosecco.

Shake and pour, then top with a splash of Prosecco.

Shake first four ingredients and pour into martini glass. Drop crème de Menthe and Blue Curacao gently along side of glass (they will sink) and splash with Prosecco.

You’re likely to work up an appetite after all of that cocktail shakin’. So, it’s a good thing Kenny shared a variety of recipes for you to try at home- and just in time for your upcoming Christmas festivities, or fleet of non-negotiable house guests!

Bacon Wrapped Jalapenos
10 fresh Jalapenos, whole
1 c. pepper jack cheese, shredded
10 strips of bacon, raw
20 toothpicks

Cut a ¼” divot in each pepper from just below the stem to just below the toe. Set the divot aside. Gently scoop out as much of the seed and white membrane as possible, and discard. Be careful not to break or tear the jalapeño.

Form enough cheese in your hand to fit in the interior of the pepper and gently stuff (approximately 3 Tbsp). Replace the divot over the cheese. Gently squeeze the pepper in your hand, and compress to close.

Place bacon on a cutting board. Place the jalapeño on the bacon, just above the toe where the divot begins. Wrap bacon at an angle, overlapping on each wrap to make sure the divot is completely covered. Gently squeeze to help bacon adhere. Secure each end of the bacon with a toothpick. Refrigerate for at least one hour before cooking. Cook either using grill method or skillet/oven method:

GRILL PROCEDURE: Place cold jalapenos on medium heat grill, and close lid. Cook until bacon is slightly crispy and cheese begins to ooze. Carefully remove toothpicks. Serve with ranch and BBQ sauce for dipping.

SKILLET/OVER PROCEDURE: Preheat oven to 400 degree. Place cold jalapeños in a lightly oiled hot skillet over medium high heat. Lightly brown on all sides. Move skillet to oven, and finish at 400 degrees for approximately 10 minutes.

Bud’s White Queso
1 ¼ lb. White American cheese, shredded
1 c. Whole milk
1 c. Yellow onion, sliced in paper thin strips
½ c. Cilantro, chopped
¼ c. Pickled jalapenos, finely chopped
2 tsp. Cumin

Can be prepared in microwave or crockpot, as described below:

MICROWAVE: Combine all ingredients in a microwave safe bowl. Microwave until hot, stirring occasionally.

CROCKPOT: Place all ingredients in crockpot, stirring occasionally, until everything is incorporated and queso is hot.

Juicy Lucy Sliders
8- 2 oz. Burger patties
4 slices American cheese, folded into 2” squares
4 King’s Hawaiian Mini Hamburger Buns
4 tsp. Ketchup
4 tsp. Yellow Mustard
4 Tbsp. Onion, raw and chopped ¼”
4 Tbsp. Pickles, chopped ¼”

Place on square of cheese in the center of one of the burger patties, folding the corners of the cheese so there is a ½” gap between the cheese and the edge of the meat. Place a second patty on top, and crimp the edges together (like making a ravioli), making sure there are no holes. Repeat with remaining patties. Put patties in refrigerator to firm.

Season both sides of burger patties with salt and pepper. Gently place burger patties on an oiled, flat grill or standard grill.

Cook approximately 3 minutes per side over medium high heat until browned on each side or cooked through. When you flip the burgers, do so gently to prevent cheese from oozing out.

Place ketchup, mustard, pickles, and onion evenly on each bottom bun. Place finished burgers on top. Cover with top bun, and enjoy!

Note: Be very careful when biting into the sliders as the cheese can be very hot!

Kenny shared one more thing with us that certainly bears mentioning, and that would be the infamous EL JEFE GRANDE CHALLENGE. This slightly larger than average burger, priced at $50, features:

11 El Jefe GrandeAn impressive 3 lb. patty of the finest beef stacked on two ENORMOUS pieces of Texas Toast (made especially for this sandwich) topped with:
· 10 oz. of French fries
· Chili
· Queso
· Sliced jalapeños
· ½ lb. of bacon
· Lettuce, tomatoes, pickles, onions, and your choice of 1 c. of mustard or mayonnaise

It is a sight to behold. Guests who complete El Jefe Grande in less than one hour will receive the burger for free, plus a $100 dining certificate for a future meal, and their picture displayed on a special wall of honor in the restaurant. Plan on signing a waiver before tackling this Big Boss. (Not kidding, actually.)
